Girembellier Phyllanthus acidus. The surette called surelle, surette pig or star-shaped gooseberry, is a fruit that comes from the girimbell tree of Madagascar or foot of surettes spread also in South Asia.
It remains green or slightly yellowish when ripe.
Its fruit is very acidic, and inedible raw.

The fruit should be pricked and left to soak in water for at least 3 days, changing the water daily. Then make the jam.
In Vietnamese cuisine, the girembellier leaf is used to flavor chua spring rolls. In Guadeloupe, the surelle can be used confit to sweet ti-punch or to develop the "punch surelle".
